Kitchen Ventilation Ceiling Type "GASTRO"
Large-area ventilation ceiling for commercial kitchens with closed ducted waste air ac-cording to ÖNORM H 6030 - B 2.3.
The system is a component of the mechanical ventilation system consisting of closed trapezoid waste air ducts, a completely flat metal ceiling and an integrated supply air system as well as the room lighting. It serves to take up and filter contaminated waste air with high latent heat energy.
Owing to the thermal lift above the cooking areas the resulting vapours are forced up, concentrated in the dome area of the vapour collection aprons and extracted by way of the parallel separator elements installed in the trapezoid ducting. The grease particles are separated through deliberate agitation and utilisation of the laws of inertia.
The number and arrangement of the grease separators can be selected freely even at a later stage, so that the air throughput of the system already in operation can be adjusted to suit the requirements.
Specific to the system, the supply air is introduced by way of ceiling trickle elements, trapezoid supply air elements or wall supply air screens, with low induction outside the production areas.
Mechanical cleaning every three months is adequate in most systems and is carried out by removing the parallel separator elements. These can be washed in any dishwashing machine. Together with the separated grease particles, the resulting condensate is dis-charged to the drain cock in the collection trough integrated in the trapezoid channel. This must be regularly drained as required.
